My ultimate favorite New York City Southerner, Jessica Staton, sent me not only a great recipe in the mail the other day, but she included it’s key ingredient: pumpkin butter! Now, I have never cooked with pumpkin butter but you can bet if Jess Staton likes it, it is meant to be tried by all. Now, I jacked up the last step because I wasn’t paying attention but they still look and taste amazing. So here you go!
Jess’ Famous Pumpkin Butter Bars!
What You Need:
1 package yellow cake mix, divided
1/2 c. butter melted
3 large eggs
1 (10 oz) jar of pumpkin butter (Jess swears Trader Joe’s has the best)
2 Tbsp milk
1 Tbsp flour
1/4 c. sugar
1/4c butter softened
1 tsp. cinnamon
What You Do:
Preheat your oven to 350 degrees. Divide yellow cake mix, put all but 1 cup in a bowl. Stir melted butter and 1 egg into cake mix. Press mixture into greased 9″x13″ pan. Mix jar of pumpkin butter with 2 eggs and milk. Pour over cake mix. Stir reserved cake mix with flour, sugar, softened butter and cinnamon. Mix together until crumbly. Spoon over top of pumpkin layer. Bake 35-40 minutes or until golden brown. Cool and cut into 2″ squares. Relish the smell of fall in your home!
