Memorial Day is just around the corner! Its a day that marks the beginning of summer, hot and lazy afternoons and most importantly, the beginning of grill season for the rest of the country that hasn’t been sitting in stifling heat for a month already. For this blessed occasion, I have reserved my most favorite steak recipe: Marinated Flank Steak. Flank steak is a great choice for many reasons. Its pretty inexpensive, I picked up a 2 lb flank steak at our local meat market for about $12. It can feed a decent amount of people. And you don’t have to worry about who likes it rare, medium rare or well done because, if you cook it just right, the flank steak should have all degrees of doneness in it when you take it off the grill. Be sure to marinate this one at least 8 hours and if you can flip the bag a few times while it is marinating, you are guaranteed to get some great flavor!
What You Need:
2/3 c. olive oil
1/4 c. lemon juice
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 (1.5-2lb) flank steak
What To Do:
Mix all of the above ingredients into a ziplock bag. Add your flank steak. (You might have to fold it slightly depending on the length of your steak.) Grill over medium-hot heat for about 6-10 minutes per side depending on how done you want the middle. Remove steak from grill and allow to sit under aluminum foil for 5 minutes. Slice diagonally, against the grain and enjoy!
