Summer is in full swing around here and the Perkins family has been busy, busy, busy! But now that most of our summer travels are behind us, it is time to get back into life in the summertime. And around my kitchen, that means firing up the grill for almost every single meal. Allow me to share with you an old Ward family goodie. My mom used to make this chicken whenever we would have company growing up and so it affectionately became known as “Guest Chicken”. It is the perfect candidate when you want to perk up your typical grilled chicken. Keep in mind, this recipe serves 6. I have made it for many different quantities of people and I would say that you are safe using this recipe as is until you hit less than 4, then I recommend cutting the ingredients in half so your chicken isn’t overwhelmingly flavorful.
What You Need:
6 tablespoons olive oil
3 Tbsp ground mustard (Like Grey Poupon or any other coarse mustard)
1/4 cup apple cider vinegar
3 cloves of garlic minced
2-3tsp of both lemon and lime juice
1/2 cup of brown sugar
1.5 tsp salt
1/2 tsp black pepper
6 boneless chicken breasts
What You Do:
Combine all ingredients into a ziploc bag, add chicken and marinate for at least 8 hours. Grill over medium-high heat for approximately 6 minutes per side.
Now this might sound crazy but I promise you this dish is absolutely perfect when you serve it over fettucini alfredo. If you don’t have a favorite brand, I like to use Buitoni’s refrigerated alfredo sauce and fettucini. The flavor combo of the chicken and the pasta is unbelievable. Serve it up with a crusty bread and a Caesar salad and let the summertime deliciousness begin!
